Cubed Swiss Steak

Ingredients:
4 (6-oz) cube steaks
2 tbsp butter
2 large onions (sliced)
1 lb mushrooms (sliced)
dash of salt
Directions:
Season cube steaks generously with salt and pepper.
Melt butter in a large skillet and add onions.
When they are translucent, add the mushrooms, if using, and saute 10 minutes or until onions have caramelized and mushrooms are nearly cooked, and the water has almost evaporated.
Push the vegetables to one side and add the cubed steaks.
Fry the steaks quickly -- about 2 to 3 minutes per side -- or until done.
Portion cube steaks with caramelized onions and mushrooms on heated plates and drizzle any accumulated juices over the meat.

Ingredients:
4 cube steaks (1 lb total)
1/2 tsp salt, divided
1/4 tsp ground pepper
1/4 cup flour
2 tbsp extra-virgin olive oil, divided
1 large onion, cut into ½-inch-thick slices
1 medium green bell pepper, thinly sliced
1 clove garlic, minced
1 tsp chopped fresh thyme
1 14-oz can whole tomatoes
1 tbsp Worcestershire sauce
Directions:
Preheat oven to 200 degrees F.
Season steaks with 1/4 teaspoon salt and pepper.
Place flour in a shallow dish.
Place steaks in dish and cover with flour.
Heat 1 tablespoon oil in a skillet over medium-high heat.
Cook steaks until browned over medium heat which should be 2 to 4 minutes per side.
Transfer steaks to a baking sheet.
Place in oven to keep warm.
Heat 1 tablespoon of oil in the pan over medium-high heat.
Add onion slices.
Cook 4 to 6 minutes until browned on both sides.
Add bell pepper slices and stir.
Cook 3 to 4 minutes until the vegetables are tender.
Add garlic, thyme, and 1/4 teaspoon salt.
Stir for 15 seconds.
Add tomatoes with juice and the Worcestershire sauce.
Stir and cook for 5 minutes until thickened. Scrape up any browned bits.
Serve steaks with sauce on top.
