Steak and Cabbage Stir-Fry with Peanut Sauce

Servings: 4
Ingredients:
1/4 cup smooth natural peanut butter
1/3 cup orange juice
3 tbsp reduced-sodium soy sauce
1 tbsp rice vinegar
4 tsp canola oil, divided
3 cloves garlic, minced
1 lb sirloin tip filet, trimmed and thinly sliced
1 small head Savoy cabbage, thinly sliced
2-5 tbsp water
2 medium carrots, grated
Directions:
Blend peanut butter, orange juice, soy sauce, and vinegar in a bowl.
Over medium-high heat, heat 2 teaspoons oil in a skillet.
Add garlic.
Stir and cook about 30 seconds.
Add steak.
Cook about 2 to 4 minutes until browned and barely pink in the middle, stirring regularly.
Transfer to a bowl.
Reduce heat to medium.
Add 2 teaspoons of oil.
Add cabbage and 2 tablespoons of water.
Cook about 3 to 5 minutes until cabbage begins to wilt.
Add carrots.
Cook and stir about 3 more minutes, until just tender.
Return the steak and juices to the pan.
Pour in the peanut sauce.
Mix.
