Italian Baked Salmon with Orzo
Total Time: 20 minutes
Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 4 servings
4 oz uncooked orzo
1 cup frozen green peas
4 (4-oz) skinless salmon fillets
2 tbsp reduced-fat Italian salad dressing
2 scallions, thinly sliced
Cook orzo in a saucepan according to package directions. Do not use salt.
After 7 minutes, stir in peas.
While orzo is cooking, place salmon on a foil-lined baking sheet,
Season with salt according to your preference.
Spread the salad dressing evenly over the salmon.
Broil 4 inches from heat source 6–8 minutes until opaque in the center.
Sprinkle half of the scallions over the salmon.
Drain orzo and peas.
Return to same saucepan.
Stir in oil and remaining scallions.
Season with salt and freshly ground black pepper.
Serve with salmon.
