Garlic-Stuffed Standing Rib Roast

Total Time: 4 hours and 25 minutes

Prep Time: 10 minutes

Cook Time: 15 minutes

Inactive Time: 4 hour

Ingredients

5 cloves garlic, thinly sliced
2 1/2 tsp kosher salt, divided
2 1/2 tsp freshly ground pepper, divided
1 8- to 9-lbs, 4-rib standing rib roast
1 tbsp canola oil

Directions

Mix 1/2 teaspoon salt and pepper with garlic in a bowl.
Cut 1/2 inch deep slits every 2 inches on roast.
Insert garlic seasoning in each slit.
Let stand for 1 hour at room temperature.
Preheat oven to 450 degrees F.
Season the meat all over with salt and pepper.
Place a roasting pan over two burners on medium-high heat.
Add oil and heat.
Add the roast.
Cook about 2 to 5 minutes per side, until dark brown on all sides.
Finish with the roast meat-side up and rib-side down.
Transfer the pan to the oven.
Roast for 15 minutes.
Reduce heat to 350 degrees F.
Roast for 1 1/2 to 2 1/2 hours (12 to 16 minutes per pound). It is done when an instant-read thermometer inserted deep into the meat shows 125 degrees F for medium-rare and 135 degrees F for medium.
Place roast on a carving board and cover loosely with foil.
Let the roast rest for 15 minutes.
