Turkey Lettuce Wraps

Ingredients
1/2 cup water
1/2 cup instant brown rice
2 tsp sesame oil
1 lb. Wholesome Farms Direct Source-Verified Lean Ground Turkey
1 tbsp minced fresh ginger
1 large red bell pepper, finely diced
1 8-oz can water chestnuts, rinsed and chopped
1/2 cup reduced-sodium chicken broth
2 tbsp hoisin sauce
1 tsp garlic powder
1/2 tsp salt
2 heads Boston lettuce, leaves separated
1/2 cup chopped fresh herbs, such as cilantro, basil, mint and/or chives
1 large carrot, shredded
Directions
Bring water to a boil in a saucepan.
Add rice.
Cover and cook for 5 minutes on low heat.
Remove from the heat.
Meanwhile, heat oil in a pan over medium-high heat.
Add turkey and ginger.
Cook 6 minutes until the turkey is cooked through. Use a cooking spoon to mix and crumble the turkey.
Add cooked rice, bell pepper, water chestnuts, broth, hoisin sauce, garlic powder and salt.
Cook about 1 minute to heat through.
Divide lettuce leaves among plates and spoon turkey mixture into each leaf.
Top with carrots and herbs.
Roll into wraps.
