Top Sirloin Steak with Carrots and Turnips

Ingredients

  • 2 tbsp extra-virgin olive oil, divided
  • 1 tbsp butter
  • 1 lb small carrots halved lengthwise
  • 1 lb turnips peeled and cut into long rectangular pieces
  • 3/4 tsp salt, divided
  • 3/4 tsp ground pepper, divided
  • 2 Wholesome Farms Direct Source-Verified 8 oz. top sirloin steaks
  • ½ tsp dried rosemary
  • 1 tbsp red-wine vinegar

Directions

  1. Preheat oven to 450 degrees F.
  2. Over medium-high heat, heat 1 tablespoon oil and butter in a cast-iron skillet.
  3. Add carrots and turnips.
  4. Add 1/4 tsp salt and pepper.
  5. Stirring regularly, cook 8 to 10 minutes until brown and soft.
  6. Set aside.
  7. Sprinkle steak with rosemary, salt and pepper.
  8. Heat 1 tablespoon oil over medium-high heat.
  9. Add the steak.
  10. Cook for about 2 minutes.
  11. Return the vegetables to the pan.
  12. Transfer the pan to the oven.
  13. Roast 8 to 10 minutes for medium doneness.
  14. Remove and let steak rest for 5 minutes.
  15. Drizzle vinegar over the vegetables.
  16. Slice and serve steak with the vegetables.
