Southwestern Turkey Cutlets

Ingredients

  • 2 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp oregano leaves
  • 1/2 tsp salt
  • 4 Wholesome Farms Direct Source-Verified 4 oz. Turkey Cutlets
  • 1 tbsp olive oil
  • 1 cup chopped onion
  • 1 cup frozen corn kernels
  • 1/2 cup drained and rinsed canned black beans

Directions

  1. Mix paprika, cumin, oregano, and salt in small bowl.
  2. Rub both sides of turkey cutlets with 1 tablespoon of the spice mixture.
  3. Set aside.
  4. Heat oil in large nonstick skillet on medium heat.
  5. Add onion.
  6. Cook and stir for about 4 minutes or until tender.
  7. Add remaining spice mixture.
  8. Cook and stir 1 minute.
  9. Stir in corn and beans.
  10. Reduce heat to low.
  11. Cover and cook 3 to 4 minutes while stirring occasionally.
  12. Set aside corn mixture.
  13. Cover with foil to keep warm.
  14. Place turkey cutlets in skillet.
  15. Cook on medium heat 3 minutes per side or until cooked through.
  16. Serve turkey cutlets with corn mixture.
