Rosemary Filet Medallions with Golden Potatoes

  • 4 sprigs of rosemary
  • 4 Wholesome Farms Direct Source-Verified filet medallions
  • 7 tbsp of olive oil
  • 1 1/2 lbs. of small potatoes
  • 1/2 halved cherry tomatoes

*butcher’s twine needed


  1. Heat oven to 200°F.
  2. Tie 1 sprig rosemary to each steak with butcher's twine and season.
  3. Heat 2 tbsp oil in an oven proof frying pan and sear meat for about 5 minutes, turning once.
  4. Transfer the pan to the oven and bake for about 30 minutes.
  5. Meanwhile, heat remaining oil in a frying pan and fry the potatoes for about 15-20 minutes until golden brown on all sides.
  6. Add tomatoes and sauté for 3 minutes then remove from heat.
  7. Season and serve with steaks.
