Peruvian Beef Kabobs

Ingredients

  • 3 cloves garlic, minced
  • 4 tbsp corn oil, divided
  • 3 tbsp distilled white vinegar
  • 1 tbsp chile powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 1/4 tsp salt, divided
  • 1 lb. Wholesome Farms Direct Source-Verified sirloin steak cubes
  • 6 baby potatoes
  • 1/2 large white onion, cut into 2-inch pieces
  • 4 medium ears corn, husked

Directions

  1. Mix garlic, 3 tablespoons oil, vinegar, chile powder, cumin, oregano, and 1 teaspoon salt in a shallow dish.
  2. Add beef and stir until coated.
  3. Let stand at room temperature for 15 minutes, stirring frequently.
  4. Meanwhile, soak 4 12-inch skewers in water.
  5. Preheat grill to medium-high.
  6. Microwave potatoes on high for 1 to 2 minutes.
  7. Cut into 1/2-inch slices.
  8. Toss the potatoes, onion, 1 1/2 teaspoons oil and 1/8 teaspoon salt in a bowl.
  9. Thread the beef, potatoes, and onion alternately onto 4 12-inch skewers.
  10. Coat corn with 1 1/2 teaspoons oil and sprinkle with salt.
  11. Grill the skewers and corn 6 to 8 minutes, turning occasionally, until the vegetables are tender and charred in spots.
