1/2 cup olive oil
Juice from 1 lemon
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp cumin
1/4 tsp cayenne pepper
2 garlic cloves, minced
1/2 red onion, minced
1/4 cup chopped fresh parsley
Sea salt and freshly ground black pepper, to taste
Combine the olive oil, lemon juice, onion, herbs and spices.
Whisk until well mixed and pour over the chicken.
Marinate in the refrigerator 2 to 8 hours, turning every few hours.
Preheat grill to medium-high heat.
Grill the chicken 5 to 6 minutes per side, depending on the cut, or until cooked through.
Let the chicken rest 4 to 5 minutes before serving.
