Marinara Meatballs

Ingredients

  • 1 egg
  • 1/2 cup unsweetened applesauce
  • 1/2 cup shredded zucchini
  • 1/4 cup finely chopped green onions
  • 1/2 tsp salt
  • 1/2 tsp dried Italian seasoning, crushed
  • 1 lb. Wholesome Farms Direct Source-Verified lean ground beef
  • 1/2 cup soft whole wheat bread crumbs
  • Nonstick cooking spray
  • 1 1/2 cups light no-sugar-added tomato-basil pasta sauce

Directions

  1. Stir egg, applesauce, zucchini, green onions, salt, and italian seasoning in a bowl.
  2. Combine ground beef and bread crumbs in a separate bowl.
  3. Fold the egg mixture into the beef mixture and mix.
  4. Cover will foil and refrigerate for 2 to 24 hours.
  5. Preheat oven to 450 degrees F.
  6. Line two baking pans with foil.
  7. Spray cooking oil on foil.
  8. Shape beef mixture into 48 small meatballs.
  9. Place meatballs in baking pans.
  10. Bake 10 to 15 minutes, until thermometer reads 160 degrees F. Turn once.
  11. Heat marinara sauce and serve with the meatballs.
