Lemon Chicken Stir-Fry

Ingredients

  • 1 lemon
  • 1/2 cup reduced-sodium chicken broth
  • 3 tbsp reduced-sodium soy sauce
  • 4 tsp flour
  • 1 tbsp canola oil
  • 1 lb. Wholesome Farms Direct Source-Verified Chicken Strips
  • 10 oz mushrooms, halved or quartered
  • 1 cup diagonally sliced carrots, ( ¼ inch thick)
  • 2 cups snow peas, (6 ounces), stems and strings removed
  • 1 bunch scallions, cut into 1-inch pieces, white and green parts divided
  • 1 tbsp chopped garlic


Directions

  1. Grate 1 teaspoon lemon zest.
  2. Set aside.
  3. Juice lemon.
  4. Mix lemon juice with broth, soy sauce, and flour in a bowl.
  5. Heat oil in a skillet over medium-high heat.
  6. Add chicken.
  7. Cook 4 to 5 minutes until cooked through, stirring occasionally.
  8. Transfer to a plate.
  9. Add mushrooms and carrots to the pan.
  10. Cook about 5 minutes until carrots are tender.
  11. Add snow peas, scallion whites, garlic and the lemon zest.
  12. Cook 30 seconds, stirring.
  13. Add broth mixture to the pan.
  14. Cook 2 to 3 minutes, stirring, until thickened.
  15. Add scallion greens, chicken, and any juices.
  16. Cook 1 to 2 minutes until heated through, stirring.
