Lamb Orzo

  • 6 oz. Wholesome Farms Direct Source-Verified Ground Lamb
  • 1 1/2 tsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cinnamon
  • 1/2 tsp dried rosemary
  • 1 14-oz can whole tomatoes, undrained
  • 2 tbsp chopped, pitted black olives
  • salt and freshly ground black pepper, to taste
  • 12 oz. orzo
  • 1/4 cup crumbled feta cheese


  1. Fill a large pot with salted water and bring to a boil.
  2. In a skillet, cook lamb 3 to 5 minutes until browned, stirring, over medium heat.
  3. Drain over a bowl.
  4. Heat oil in a Dutch oven over medium heat.
  5. Add onion.
  6. Cook 4 to 5 minutes until softened.
  7. Add garlic, cinnamon, and rosemary.
  8. Cook with stirring until fragrant and then 1 minute more.
  9. Add lamb.
  10. Puree tomatoes with juices in a food processor.
  11. Add meat mixture.
  12. Cook about 10 minutes, stirring occasionally, until the sauce is thickened.
  13. Remove from heat.
  14. Stir in olives.
  15. Season with salt and pepper.
  16. Meanwhile, cook orzo according to package directions.
  17. Drain, toss with lamb, and serve garnished with feta.
