Korean BBQ Short Ribs

Ingredients

  • 1 large Asian pear or 2 firm ripe pears, peeled and grated
  • 3 cloves garlic, grated
  • 3 tbsp reduced-sodium tamari
  • 2 tbsp toasted sesame oil
  • 2 tsp grated fresh ginger
  • 1/4 tsp ground pepper
  • 1 set Wholesome Farms Direct Source-Verified 1 lb. beef short ribs
  • 12 small lettuce leaves
  • 12 perilla leaves or mint leaves
  • 3 cups cooked brown rice
  • 1/4 cup Ssamjang
  • Kimchi for garnish

Directions

  1. Combine pear, garlic, tamari, oil, ginger, and pepper in a bowl.
  2. Add ribs and massage.
  3. Cover and refrigerate for at least 2 hours and up to 24 hours. Stir occasionally.
  4. Preheat grill to high.
  5. Lightly oil the grill rack.
  6. Pick up meat and shake off excess marinade.
  7. Grill 30 to 45 minutes per side for rare or longer to desired doneness.
  8. Set aside to rest for 5 minutes.
  9. Assemble 12 lettuce wraps with 1 perilla leaf, 1/4 cup rice, one piece of meat and 1 teaspoon SSamjang each. If desired, add kimchi.
