Grape-Shallot Chicken

Ingredients

  • 1/4 cup all-purpose flour
  • 4 Wholesome Farms Direct Source-Verified chicken breast cutlets
  • 1 tsp kosher salt
  • 1/4 tsp freshly ground pepper
  • 5 tsp canola oil, divided
  • 1 cup thinly sliced shallots
  • 2 cups halved seedless green or red grapes
  • 1 cup white wine
  • 1 cup reduced-sodium chicken broth
  • 2 tbsp chopped fresh parsley

Directions

  1. Place flour in a shallow dish.
  2. Sprinkle chicken with salt and pepper.
  3. Dredge the chicken in the flour.
  4. Heat 3 teaspoons oil in a skillet over medium-high heat.
  5. Cook chicken 2 to 4 minutes per side, until golden.
  6. Transfer to a plate.
  7. Add 2 teaspoons oil to the pan.
  8. Heat over medium heat.
  9. Add shallots.
  10. Cook 2 to 3 minutes, stirring.
  11. Add grapes.
  12. Cook 2 to 3 minutes, stirring at times.
  13. Sprinkle with 5 teaspoons of flour.
  14. Stir to coat.
  15. Add wine and broth.
  16. Bring to a boil, stirring constantly.
  17. Reduce to simmer about 8 minutes, scraping up any browned bits, until sauce is reduced and thickened.
  18. Add parsley.
  19. Return chicken to the pan.
  20. Turn to coat with the sauce and heat through for 2 minutes.
