Garlic-Stuffed Standing Rib Roast

  • 5 cloves garlic, thinly sliced
  • 2 1/2 tsp kosher salt, divided
  • 2 1/2 tsp freshly ground pepper, divided
  • 1 Wholesome Farms Direct Source-Verified standing rib roast
  • 1 tbsp canola oil


  1. Mix 1/2 teaspoon salt and pepper with garlic in a bowl.
  2. Cut 1/2 inch deep slits every 2 inches on roast.
  3. Insert garlic seasoning in each slit.
  4. Let stand for 1 hour at room temperature.
  5. Preheat oven to 450 degrees F.
  6. Season the meat all over with salt and pepper.
  7. Place a roasting pan over two burners on medium-high heat.
  8. Add oil and heat.
  9. Add the roast.
  10. Cook about 2 to 5 minutes per side, until dark brown on all sides.
  11. Finish with the roast meat-side up and rib-side down.
  12. Transfer the pan to the oven.
  13. Roast for 15 minutes.
  14. Reduce heat to 350 degrees F.
  15. Roast for 1 1/2 to 2 1/2 hours (12 to 16 minutes per pound). It is done when an instant-read thermometer inserted deep into the meat shows 125 degrees F for medium-rare and 135 degrees F for medium.
  16. Place roast on a carving board and cover loosely with foil.
  17. Let the roast rest for 15 minutes.
