Garlic Pork Shoulder Roast

  • 3 tbsp olive oil
  • 3 tbsp chopped garlic
  • salt and ground black pepper

  1. Preheat the oven to 425 degrees F.
  2. In a small bowl, mix together the olive oil, garlic, salt and pepper.
  3. Using a pastry brush, spread the mixture all over the pork shoulder.
  4. Set the meat on a rack set into a roasting pan.
  5. Roast for 20 minutes.
  6. Reduce the heat to 325 degrees F.
  7. Cook about 4 hours, until an instant-read thermometer inserted into the shoulder reads 185 degrees F.
  8. Remove the pork from the oven and let rest about 30 minutes.
