Garlic-Crusted Roast Rack of Lamb

Ingredients

  • 1 head of garlic, cloves peeled
  • 1/4 cup rosemary leaves
  • 1/4 cup extra-virgin olive oil
  • 2 Wholesome Farms Direct Source-Verified Frenched Racks of Lamb
  • Salt and ground pepper

Directions

  1. Combine the garlic, rosemary and olive oil in a food processor.
  2. Pulse until the garlic is finely chopped.
  3. Season the lamb racks with salt and pepper.
  4. Rub the garlic-rosemary oil on all sides of the lamb racks.
  5. Set the racks fat side up on a large rimmed baking sheet.
  6. Let stand for 1 hour.
  7. Preheat the oven to 450°.
  8. Roast the lamb in the upper third of the oven for 15 minutes.
  9. Flip the racks over.
  10. Roast for 10 minutes longer for medium-rare meat.
  11. Transfer the racks to a cutting board.
  12. Let rest for 10 minutes.
  13. Carve the racks in between the rib bones and transfer to plates.
  14. Serve right away.
