Flat Iron Steak with Red Wine Sauce

Ingredients

  • 3 Wholesome Farm Direct Source-Verified 6 oz. Flat Iron Steaks
  • Salt and freshly ground black pepper
  • 3 tbsp extra-virgin olive oil, plus extra for garnish
  • 6 tbsp cold unsalted butter
  • 1 onion, thinly sliced
  • 1 tbsp minced garlic
  • 1 tsp dried oregano
  • 1/4 cup tomato paste
  • 2 1/2 cups dry red wine

Directions

  1. Turn on the grill to medium-high heat.
  2. Season the steaks with salt and pepper and drizzle with olive oil.
  3. Grill to desired doneness - for medium-rare, about 5 minutes per side.
  4. Meanwhile, melt 2 tablespoons of butter in a large saucepan over medium-high heat.
  5. Add the onions and saute until tender, which should be about 5 minutes.
  6. Season with salt.
  7. Add the garlic and oregano and saute about 30 seconds.
  8. Stirring constantly, add in the tomato paste and cook for 2 minutes.
  9. Add the wine slowly and whisk the mixture.
  10. Transfer the steaks to a cutting board.
  11. Let the steaks rest for 10 minutes under foil.
  12. Meanwhile, simmer the sauce for about 10 minutes, stirring occasionally.
  13. Strain the sauce into a small bowl, pressing on the solids to extract as much liquid as possible.
  14. Discard the solids in the strainer and return the sauce to the saucepan and bring back to a slow simmer.
  15. Cut the remaining 4 tablespoons of butter into small 1/2-inch chunks and whisk in the sauce a little at a time.
  16. Season the sauce, to taste, with salt and pepper.
  17. Thinly slice the steaks across the grain. Divide the steak slices among 6 plates.
  18. Drizzle the sauce over the steak, drizzle a little more extra-virgin olive oil and serve.
