Flat Iron Steak Spinach Salad with Blueberries

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup chopped walnuts
  • 3 tbsp raspberry vinegar
  • 1 tbsp minced shallot
  • 1/2 tsp salt
  • 3 tbsp canola oil
  • 3 Wholesome Farms Direct Source-Verified 6 oz. flat iron steaks
  • 1/2 tsp ground pepper
  • 8 cups baby spinach
  • 1/4 cup crumbled feta cheese

Directions

  1. Preheat grill to medium.
  2. Pulse 1/4 cup blueberries, 1/4 cup walnuts, vinegar, shallot, and 1/4 teaspoon salt in a food processor.
  3. Add oil until blended in.
  4. Set aside dressing in a bowl.
  5. Season steak with pepper and salt.
  6. Oil grill rack.
  7. Grill steak about 5 minutes per side for medium-rare, 6 minutes per side for medium.
  8. Let steaks rest for 5 minutes.
  9. Add spinach to the bowl.
  10. Toss to coat.
  11. Divide spinach among 4 plates.
  12. Slice steak in thin pieces.
  13. Top salads with steak, feta cheese, and remaining blueberries and walnuts.
