Creamy Chive Chicken

Ingredients

  • 4 Wholesome Farms Direct Source-Verified boneless, skinless chicken breasts
  • 1 tsp kosher salt, divided
  • 1/4 cup plus 1 tablespoon all-purpose flour, divided
  • 3 tsp extra-virgin olive oil, divided
  • 2 large shallots, finely chopped
  • 1/2 cup dry white wine
  • 1 14-oz can reduced-sodium chicken broth
  • 1/3 cup reduced-fat sour cream
  • 1 tbsp Dijon mustard
  • 1/2 cup chopped chives

Directions

  1. Season both sides of each chicken breast with 1/2 teaspoon salt.
  2. Place 1/4 cup flour in a shallow glass baking dish.
  3. Add chicken, coating on all sides with flour.
  4. Discard excess flour.
  5. Heat 2 teaspoons oil in a skillet over medium-high heat.
  6. Add chicken.
  7. Cook 1 to 2 minutes per side, until golden brown.
  8. Transfer to a plate. Cover with foil to keep warm.
  9. Heat 1 teaspoon oil in the pan over medium-high heat.
  10. Add shallots.
  11. Cook 1 to 2 minutes until golden brown, stirring constantly and scraping up any browned bits.
  12. Sprinkle with 1 tablespoon flour.
  13. Stir.
  14. Add wine, broth, and 1/2 teaspoon salt.
  15. Bring to a boil. Stir often.
  16. Add chicken and any juices.
  17. Simmer to cook for about 6 minutes.
  18. Stir in sour cream and mustard until smooth and chicken is coated.
  19. Stir in chives and serve immediately.
