Coffee-Braised Pot Roast

Ingredients

  • 1 Wholesome Farms Direct 3.5 lbs. beef chuck roast
  • Salt, to taste
  • 4 tsp extra-virgin olive oil, divided
  • Freshly ground pepper, to taste
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 3/4 cup strong brewed coffee
  • 2 tbsp balsamic vinegar
  • 4 tbsp flour mixed with 2 tablespoons water
  • 2 large onions, halved and thinly sliced

Directions

  1. Preheat oven to 300 degrees F.
  2. Sprinkle beef with salt and pepper.
  3. Heat 2 tsp oil in a Dutch oven over medium-high heat.
  4. Add beef.
  5. Cook about 5 to 7 minutes until well browned on all sides.
  6. Set aside on a plate.
  7. Add 2 teaspoons oil to the pot.
  8. Reduce heat to medium and add onions.
  9. Cook for 5 to 7 minutes, stirring regularly, until softened and golden.  
  10. Add garlic and thyme.
  11. Stir for 1 minute.
  12. Add coffee and vinegar.
  13. Bring to a simmer.
  14. Return the beef to the pot.
  15. Spoon some onions over it.
  16. Cover and transfer to the oven.
  17. Braise in the oven for 2 1/2 to 3 hours, until fork-tender but not falling apart.
  18. Transfer to a cutting board and let rest covered loosely with foil for 10 minutes.
  19. Meanwhile, skim fat from the pan juices.
  20. Bring to a boil over medium-high heat.
  21. Add the flour mixture.
  22. Cook for about 1 minute, whisking, until the gravy thickens slightly.
  23. Season beef with pepper to taste and serve with gravy.
