Coconut Curry Meatball Soup

  • 1.5 lbs. Wholesome Farms Direct Source-Verified Ground Pork
  • Cilantro as garnish
  • 3/4 cup chopped cilantro including stems and leaves
  • 2 small shallots
  • 3/4 cup diced carrots
  • 1 tbsp grated ginger
  • 2 tbsp olive oil
  • 1 tbsp fish sauce
  • 1/2 tsp salt
  • 1/2 tsp cumin powder
  • 1/4 tsp black pepper
  • 3 tbsp red curry paste
  • 1 tbsp coconut oil
  • 14 oz full fat coconut milk
  • 1/2 cup chicken stock
  • 1 tbsp fish sauce
  • Half one whole lime juice


  1. Place the cilantro, shallots, carrots, ginger, and olive oil into a food processor.
  2. Pulse a few times until finely chopped.
  3. Mix ground meat with finely chopped mixture and the fish sauce, salt, cumin powder, and black pepper.
  4. Use your hands to form small round shape meatballs.
  5. Heat 1 tablespoon of coconut oil in a soup pot over medium-high heat.
  6. Add 3 tablespoons of red curry paste.
  7. Stir-fry for a few seconds.
  8. Pour in coconut milk.
  9. Bring to a boil.
  10. Reduce the heat to medium and cook, stirring occasionally. Continue until the red oil rises to the surface.
  11. Add meatballs one at a time.
  12. Cook for about 10 minutes. Season the broth with 1 tablespoon fish sauce and the allotted lime juice.
  13. Garnish with cilantro leaves.
