Chicken Waldorf Salad

  • 1/3 cup low-fat mayonnaise
  • 1/3 cup nonfat plain yogurt
  • 2 tsp lemon juice
  • 1/4 tsp salt
  • 3 cups Wholesome Farms Direct Source-Verified chicken breast chunks
  • 1 medium red apple, diced
  • 1 cup halved red grapes
  • 1 cup sliced celery
  • 1/4 cup chopped walnuts


  1. Heat 1 tablespoon oil in a skillet over medium-high heat.
  2. Sprinkle salt and pepper over chicken breast chunks.
  3. Place chicken in skillet.
  4. Cook 2 to 4 minutes. Stir, flipping pieces of chicken. Cook another 2 to 4 minutes, until center is barely pink.
  5. Place chicken on a plate and refrigerate to cool it.
  6. Stir mayonnaise, yogurt, lemon juice and salt.
  7. Add chicken, apples, grapes, celery and 1/4 cup walnuts.
  8. Stir to coat well.
