Baked Caprese Chicken

  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Kosher salt and freshly ground black pepper, to taste
  • 8 Wholesome Farms Direct Source-Verified bone-in, skin-on chicken thighs
  • 2 tbsp unsalted butter
  • 8 oz fresh mozzarella cheese, cut into 8 slices
  • 2 Roma tomatoes, sliced
  • 1/4 cup basil leaves, chiffonade
  • 1/2 cup balsamic vinegar
  • 2 tbsp brown sugar, packed


  1. Preheat oven to 400 degrees F.
  2. Add balsamic vinegar and brown sugar to a small saucepan over medium heat.
  3. Bring to a slight boil for about 6-8 minutes, reducing by half.
  4. Combine olive oil, basil and oregano with salt and pepper, to taste.
  5. Work the mixture onto both sides of the chicken.
  6. Melt butter in a large ovenproof skillet over medium high heat.
  7. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side.
  8. Drain excess fat.
  9. Place into oven and roast for about 25 to 30 minutes until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F.
  10. Top each chicken thigh with mozzarella cheese.
  11. Then broil for 2-3 minutes until the cheese has melted completely.
  12. Serve immediately, topped with tomatoes, drizzled with balsamic reduction and garnished with basil.
