Ingredients:
4 lbs. London broil roast
1 clove garlic, minced
1 tsp salt
3 tbsp soy sauce
1 tbsp ketchup
1 tbsp vegetable oil
1/2 tsp ground black pepper
1/2 tsp dried oregano
Directions:
Mix together garlic, salt, soy sauce, ketchup, vegetable oil, black pepper and oregano.
Score the meat about 1/8 inch deep on both sides using a diamond cut.
Rub garlic mixture into both sides of the meat.
Wrap tightly in aluminum foil, and refrigerate for 5 to 6 hours, or overnight.
Flip meat every few hours.
Preheat an outdoor grill for high heat, and lightly oil grate.
Place meat on the prepared grill.
Cook for 3 to 7 minutes per side, or to desired doneness.
Raspberry-Balsamic London Broil

Cook Time: 30 minutes
Inactive Time: 20 minutes - 8 hours

Ingredients:
1/3 cup dry red wine
1/4 cup balsamic vinegar
2 tbsp raspberry preserves
2 cloves garlic, minced
1/2 tsp salt
Freshly ground pepper, to taste
3 tbsp finely chopped shallot
1 tsp extra-virgin olive oil
1 1/2 lbs London broil, trimmed
Directions:
Stir wine, vinegar, raspberry preserves, garlic, salt and pepper in a bowl.
Place roast in a shallow glass dish.
Pour the marinade over the meat.
Turn meat to coat.
Cover and marinate in the refrigerator for at least 20 minutes and up to 8 hours, turning throughout.
Remove the meat from the marinade.
Pour the marinade in a saucepan.
Add shallot and set aside.
Brush a ridged grill pan with oil.
Heat over medium-high heat.
Add meat and cook for 10 to 12 minutes per side for medium-rare, or until it reaches desired doneness.
Meanwhile, bring the marinade to a boil.
Cook over medium-high heat for 5 to 7 minutes, until reduced to 1/2 cup.
Remove from the heat.
Transfer the meat to a cutting board.
Let rest for 5 minutes.
Slice meat thinly against the grain.
Add juices on cutting board to the sauce.
Serve the meat with the raspberry-balsamic sauce.
