Lamb Stew Tenders
Cut from the leg of the lamb, these Lamb Stew Tenders are a delicious base for a warm and seasoned stew. Each bite of meat will be tender, flavorful, and juicy. Lamb has a stronger more intense flavor than other meats that is sometimes described as earthy.

Ingredients:
2 lbs lamb stew tenders
1 1/2 tsp sea salt
1 tsp ground black pepper
1 tsp ground cinnamon
1/4 tsp ground nutmeg
2 tbsp extra virgin coconut oil
1 medium yellow onion, diced
8-10 baby carrots, diced
2 whole celery stalks, diced
3 cloves garlic, minced
1 (28-oz) can diced tomatoes
1 cup red wine
1 bay leaf
fresh parsley
Directions:
Place the lamb in a mixing bowl.
Add salt, pepper, cinnamon, and nutmeg.
Toss until lamb is covered with mixture.
Cover and place in refrigerator for at least one hour and up to 24 hours.
Bring lamb out of fridge at least 15 minutes before begin cooking to bring it to room temperature.
In a Dutch oven, heat the coconut oil over medium heat.
Add pieces of lamb and brown on all sides. If needed, work in batches.
Add the onion, carrots, celery and garlic once all the meat is browned.
Cook for about five minutes. Stir often. until vegetables start to soften.
Once the vegetables start to soften, add the tomatoes, wine and bay leaf.
Stir.
When mixture begins to bubble, reduce the heat to low and cover.
Cook for 2 hours, or until meat falls apart when tested with a fork.
Serve topped with fresh chopped parsley.

Ingredients:
2 lbs lamb stew tenders
1 3/4 lbs white potatoes, peeled and cut into 1-inch pieces
3 large leeks, white part only, halved, washed, and thinly sliced
3 large carrots, peeled and cut into 1-inch pieces
3 stalks celery, thinly sliced
1 14-oz can reduced-sodium chicken broth
2 tsp chopped fresh thyme
1 tsp salt
1 tsp freshly ground pepper
*6-quart slow cooker
Directions:
Add all ingredients to slow cooker.
Stir.
Cook on low about 8 hours until lamb is fork-tender.
