Indian Ground Lamb Curry
Total Time: 4 hours and 25 minutes

Ingredients:
2 tbsp ghee
1 lb ground lamb
1 cup peas
2 potatoes, chopped
3 carrots, chopped
1 onion, diced
4 cloves garlic, minced
1-inch fresh ginger, minced
1-2 Serrano peppers
4 tomatoes, chopped
1 tbsp coriander powder
1 tsp paprika
1 tsp meat masala
1/2 tsp cumin powder
1/2 tsp cayenne pepper
1/4 tsp turmeric powder
1 tsp salt
1/2 tsp ground black pepper
1 cup organic tomato sauce
optional: cilantro for garnish
Directions:
Melt ghee in a saute pan over medium heat.
Saute onions until golden brown.
Add ginger, garlic and serrano pepper.
Stir-fry for a minute.
Add tomatoes.
Cover pan for 5 minutes.
Add spices.
Stir-fry for one minute.
Add the ground lamb and cook until fully browned.
Add meat mixture to slow cooker.
Add the peas, carrots, potatoes and tomato sauce.
Cook on low for 4-5 hours.
Garnish with cilantro if desired.
Lamb Orzo
Total Time: 40 minutes
Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 4
Ingredients:
6 oz lean ground lamb
1 1/2 tsp olive oil
1 large onion, finely chopped
3 cloves garlic, minced
1 tsp ground cinnamon
1/2 tsp dried rosemary
1 14-oz can whole tomatoes, undrained
2 tbsp chopped, pitted black olives
salt and freshly ground black pepper, to taste
12 oz orzo
1/4 cup crumbled feta cheese
Directions:
Fill a large pot with salted water and bring to a boil.
In a skillet, cook lamb 3 to 5 minutes until browned, stirring, over medium heat.
Drain over a bowl.
Heat oil in a Dutch oven over medium heat.
Add onion.
Cook 4 to 5 minutes until softened.
Add garlic, cinnamon, and rosemary.
Cook with stirring until fragrant and then 1 minute more.
Add lamb.
Puree tomatoes with juices in a food processor.
Add meat mixture.
Cook about 10 minutes, stirring occasionally, until the sauce is thickened.
Remove from heat.
Stir in olives.
Season with salt and pepper.
Meanwhile, cook orzo according to package directions.
Drain, toss with lamb, and serve garnished with feta.
