Marinara Meatballs
Total Time: 2 hours and 30 minutes

Ingredients:
1 egg
1/2 cup unsweetened applesauce
1/2 cup shredded zucchini
1/4 cup finely chopped green onions
1/2 tsp salt
1/2 tsp dried Italian seasoning, crushed
1 lb lean ground beef
1/2 cup soft whole wheat bread crumbs
Nonstick cooking spray
1 1/2 cups light no-sugar-added tomato-basil pasta sauce
Directions:
Stir egg, applesauce, zucchini, green onions, salt, and italian seasoning in a bowl.
Combine ground beef and bread crumbs in a separate bowl.
Fold the egg mixture into the beef mixture and mix.
Cover will foil and refrigerate for 2 to 24 hours.
Preheat oven to 450 degrees F.
Line two baking pans with foil.
Spray cooking oil on foil.
Shape beef mixture into 48 small meatballs.
Place meatballs in baking pans.
Bake 10 to 15 minutes, until thermometer reads 160 degrees F. Turn once.
Heat marinara sauce and serve with the meatballs.
Korean Beef Bowl
Total Time: 25 minutes
Cook Time: 25 minutes

Ingredients:
1 cup quinoa
1 tbsp vegetable oil
1/4 tsp fresh ground ginger
3 cloves garlic, minced
1 lb lean ground beef
1/3 cup brown sugar
1/4 cup low sodium soy sauce
1 tbsp sesame oil
1/2 tsp crushed red pepper flakes
salt and pepper, to taste
2 green onions, thinly sliced
Directions:
Place the quinoa in a small stock pot and cover with 2 cups water.
Bring to a full boil, then reduce heat to a simmer, cover, and let cook for 15 minutes.
Meanwhile, heat the oil in a large pan.
Cook the garlic and ginger for about 1 minute, stirring constantly.
Add the ground beef and brown completely.
Drain the fat.
In a small bowl, combine brown sugar, soy sauce, sesame oil, red pepper flakes, salt and pepper.
Add the soy sauce mixture to the ground beef and let cook for 3-5 minutes to allow the flavors to set.
Once the quinoa is done, take off the heat and fluff with a fork.
Serve beef over quinoa, top with green onion.
