Ingredients:
1 beef eye round
Salt
Pepper
Paprika
Vegetable oil
Directions:
Preheat oven to 500 degrees.
Season roast with salt, pepper, and paprika.
Rub meat with vegetable oil.
Place meat in roasting pan in preheated oven.
Roast beef for 5 minutes per pound. For example, a 3-lb. roast would take 15 minutes to cook.
Then turn off oven. Do not open the oven and let the roast sit for 2 hours (regardless of size) in the closed, turned off oven.
