Cajun Chicken Drumsticks

Servings: 10 drumsticks
5 tbsp butter
1 tsp paprika
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp dried thyme
1/4 tsp black pepper
1/4 tsp white pepper
1/4 tsp cayenne pepper
Stir together all the spices. Store in an airtight container until ready to use.
Preheat oven to 400 degrees.
Lightly grease a rimmed baking sheet with nonstick spray.
Place drumsticks on the prepared tray.
Sprinkle the drumsticks with the spices, covering all sides.
Leave the side with the most meat and skin facing up.
Put a dab of about 1/2 tablespoon butter on the top of each drumstick, on the part that is most meaty. The butter will melt all over the meat and skin, keeping the meat juicy, and making the skin crispy.
Bake for 25-30 minutes in the oven.
Slow-Cooked Orange Chicken Drumsticks
Total Time: 2 to 4 hours and 30 minutes
Prep Time: 10 minutes
Cook Time: 15 minutes
Inactive Time: 2 to 4 hours
2 tsp orange zest
2 tbsp orange juice
3 tbsp reduced-sodium soy sauce
3 cloves garlic, minced
1 1/2 tbsp minced fresh ginger
1 tbsp rice vinegar
1/4 tsp crushed red pepper
12 medium chicken drumsticks, skin removed
2 tbsp chopped fresh cilantro
2 tsp toasted sesame seeds
Mix orange zest, orange juice, soy sauce, garlic, ginger, vinegar and crushed red pepper in a small bowl.
Spray a 5-quart slow cooker with cooking spray.
Pour in sauce.
Mix to coat.
Cover and cook 2 to 3 hours on high or 4 hours on low. Remove when instant-read thermometer reads 165 degrees F when inserted into the thickest part of the meat without touching bone.
Set the drumsticks to a bowl.
Pour the liquid in a medium skillet.
Bring to a boil over high heat for 10 to 15 minutes.
Pour the sauce over the drumsticks.
Serve sprinkled with cilantro and sesame seeds.
