Chicken Satay with Peanut Dipping Sauce
Total Time: 2 hours and 20 minutes

Servings: 2 skewers
Ingredients:
3 shallots, finely chopped
6 cloves garlic, finely chopped
1/2 cup canned lite coconut milk
2 tbsp fresh lime juice
1 tbsp raw honey
3 fresh cilantro sprigs, chopped
1/4 tsp ground cumin
1/4 tsp ground turmeric
2 lbs raw chicken breast, boneless, skinless, cut into 2-inch chunks
2 to 3 tbsp hot water
1/2 cup chunky peanut butter
3 tbsp fresh lime juice
1 tbsp raw honey
2 tbsp reduced-sodium soy sauce
1/2 tsp chili sauce
Directions:
Soak 16 wooden skewers in water.
Place shallots, garlic, coconut milk, lime juice, honey, cilantro, cumin, and turmeric in blender.
Cover and blend until smooth.
Place chicken in a glass dish.
Top with blended mixture and stir to cover all of the chicken.
Marinate, covered, in refrigerator for 2 hours.
Preheat grill or broiler on high.
Place 2 to 3 pieces of chicken on each skewer.
Grill or broil skewers for 5 to 6 minutes, turning every 2 minutes, or until chicken is no longer pink in the middle.
Place water, peanut butter, lime juice, honey, soy sauce, and chili sauce in a small bowl.
Whisk to blend.
Serve chicken skewers with peanut dipping sauce.
Chicken Waldorf Salad
Total Time: 20 minutes
Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients:
1/3 cup low-fat mayonnaise
1/3 cup nonfat plain yogurt
2 tsp lemon juice
1/4 tsp salt
3 cups chicken breast chunks
1 medium red apple, diced
1 cup halved red grapes
1 cup sliced celery
1/4 cup chopped walnuts
Directions:
Heat 1 tablespoon oil in a skillet over medium-high heat.
Sprinkle salt and pepper over chicken breast chunks.
Place chicken in skillet.
Cook 2 to 4 minutes. Stir, flipping pieces of chicken. Cook another 2 to 4 minutes, until center is barely pink.
Place chicken on a plate and refrigerate to cool it.
Stir mayonnaise, yogurt, lemon juice and salt.
Add chicken, apples, grapes, celery and 1/4 cup walnuts.
Stir to coat well.
