Creamy Chive Chicken Breasts

Ingredients

4 boneless, skinless chicken breasts
1 tsp kosher salt, divided
1/4 cup plus 1 tablespoon all-purpose flour, divided
3 tsp extra-virgin olive oil, divided
2 large shallots, finely chopped

1/2 cup dry white wine
1 14-oz can reduced-sodium chicken broth
1/3 cup reduced-fat sour cream
1 tbsp Dijon mustard
1/2 cup chopped chives

Directions:

Season both sides of each chicken breast with 1/2 teaspoon salt.
Place 1/4 cup flour in a shallow glass baking dish.
Add chicken, coating on all sides with flour.
Discard excess flour.
Heat 2 teaspoons oil in a skillet over medium-high heat.
Add chicken.
Cook 1 to 2 minutes per side, until golden brown.
Transfer to a plate. Cover with foil to keep warm.
Heat 1 teaspoon oil in the pan over medium-high heat.
Add shallots.
Cook 1 to 2 minutes until golden brown, stirring constantly and scraping up any browned bits.
Sprinkle with 1 tablespoon flour.
Stir.
Add wine, broth, and 1/2 teaspoon salt.
Bring to a boil. Stir often.
Add chicken and any juices.
Simmer to cook for about 6 minutes.
Stir in sour cream and mustard until smooth and chicken is coated.
Stir in chives and serve immediately.
