I’m feeling it hard these last few weeks. ZERO inspiration in the kitchen.
All 4 boys did wrestling this year so we’re literally running to town at least 4 extra times per week PLUS tournaments on the weekend.
So if I don’t prep and plan supper I just end up cooking eggs and my friend, I’m to a point where I’d rather starve then eat another over easy egg right now.
Since allowing our kids to do sports is a choice we’ve made I decided I needed to better plan or we’ll keep eating eggs.
So I wrote down a huge list of my favorite easy and quick meals.
Most often these recpies used ground beef.
I know I’m not the only “stretched too thin” mom out there who struggles with mealtime.
That’s why I’m sharing my favorite ground beef recipes that I have planned for the next week.
These recipes are easy and quick and will help make your meals a little less stressful.
I always double my meals so I only have to cook 3-4 nights a week.
And if we don’t eat up all the leftovers I freeze them.
