Coffee and Chili-Rubbed Top Sirloin

Ingredients:
1 1/2 tsp chili powder
1 1/2 tsp fine ground espresso coffee
1/2 tsp brown sugar
1/4 tsp dry mustard
1/4 tsp ground coriander
1/4 tsp salt
1/4 tsp freshly ground black pepper
4 top sirloin filets
Directions:
Spray a large skillet with cooking spray and preheat it over medium-high heat.
In a small bowl combine all the ingredients.
Immerse the steaks in the rub, covering the steaks well on both sides.
Cook steak for 14 minutes, turning once, for medium to medium-rare.
Allow steak to sit for 5 minutes before slicing.
Top Sirloin Steak with Carrots and Turnips

Cook Time: 25 minutes

Ingredients:
2 tbsp extra-virgin olive oil, divided
1 tbsp butter
1 lb small carrots halved lengthwise
1 lb turnips peeled and cut into long rectangular pieces
3/4 tsp salt, divided
3/4 tsp ground pepper, divided
1 lb top sirloin steak, about 1 inch thick, trimmed
½ tsp dried rosemary
1 tbsp red-wine vinegar
Directions:
Preheat oven to 450 degrees F.
Over medium-high heat, heat 1 tablespoon oil and butter in a cast-iron skillet.
Add carrots and turnips.
Add 1/4 tsp salt and pepper.
Stirring regularly, cook 8 to 10 minutes until brown and soft.
Set aside.
Sprinkle steak with rosemary, salt and pepper.
Heat 1 tablespoon oil over medium-high heat.
Add the steak.
Cook for about 2 minutes.
Return the vegetables to the pan.
Transfer the pan to the oven.
Roast 8 to 10 minutes for medium doneness.
Remove and let steak rest for 5 minutes.
Drizzle vinegar over the vegetables.
Slice and serve steak with the vegetables.
