Chimichurri Rib-Eye with Tomato Salad

Ingredients:
1 cup parsley leaves
1 small clove garlic, chopped
4 tbsp distilled white vinegar
6 1/2 tsp extra-virgin olive oil
1/4 tsp cayenne pepper
4 medium tomatoes, cut into wedges
1/2 cup thinly sliced sweet onion
salt and ground pepper
1 lb boneless rib-eye steak
Directions:
Chop parsley and garlic together until minced.
Stir 3 tablespoons of vinegar, 4 teaspoons of oil, 1/2 teaspoon salt and 1/4 teaspoon cayenne pepper with parsley and garlic together in a bowl.
Preheat grill to high.
Separately, mix together tomatoes, onion, 2 teaspoons of oil, and 1 tablespoon of oil.
Season with salt and pepper according to your taste preference.
Prepare steak by rubbing with oil.
Season steak on both sides with salt and pepper according to your taste preference.
Place steak on grill for 3 to 4 minutes per side for medium-rare doneness.
Let the steak rest for 5 minutes.
Serve the steak with the sauce on top and the salad on the side.
Grilled Rib Eye Spice Rubbed Steak

Ingredients:
4 tbsp paprika
2 tbsp coarse black pepper
1/2 tbsp white pepper
1/2 tbsp cayenne pepper
5 tbsp minced garlic
1/2 cup brown sugar
6 tbsp balsamic vinegar
1 tbsp sea salt
1/4 cup chopped fresh rosemary
1/4 cup chopped fresh tarragon
1/4 cup chopped fresh thyme
Olive oil, as needed

Directions:
Except for the oil, combine all ingredients in a large bowl.
Stir the mixture. As you stir, add olive till the mixture has a medium consistency, not too thick and not too thin.
Submerge the steaks in mixture, rubbing it into the surface of the steaks.
Marinate steaks in mixture for approximately 30 minutes.
Preheat grill to 425 to 450 degrees F.
Place steaks on grill. Flip the steak halfway through cooking time. To cook a 16-ounce steak to preferred doneness, cook for: rare, 2 to 3 minutes on each side, medium-rare, 4 to 5 minutes on each side and medium, 6 to 7 minutes on each side.
