Oven-Barbecued Brisket
Total Time: 11 hours and 45 minutes

Ingredients:
2 medium shallots, minced
2 cloves garlic, minced
4 tsp chili powder
4 tsp smoked paprika
2 tsp ground cinnamon
2 tsp dried oregano
1 tsp kosher salt
4 lbs brisket, trimmed of fat
1/4 cup Worcestershire sauce
1 14-oz can no-salt-added diced tomatoes
1/4 cup cider vinegar
Directions:
Mix shallots, garlic, chili powder, paprika, cinnamon, oregano, and salt in a bowl.
Rub meat with seasoning.
Place meat in a 9-by-13-inch baking dish.
Cover and refrigerate for at least 8 hours or overnight.
Pour the Worcestershire sauce over the meat.
Cover the pan with foil.
Preheat oven to 350 degrees F, allowing the meat to come to room temperature.
Bake brisket for 2 hours, covered.
Meanwhile, blend tomatoes and vinegar in a food processor.
After 2 hours, pour the tomato mixture over the meat.
Bake covered for about 1 1/2 hours longer until the meat is tender. Baste with pan juices every 30 minutes.
Remove the meat from the oven.
Set aside, removing from sauce, on a cutting board for 10 minutes.
Slice and serve, if desired with the sauce in the pan (after removing fat).
Chili Beef Brisket
Total Time: 4 hours and 10 minutes
Prep Time: 10 minutes
Cook Time: 30 minutes
Inactive Time: 3 hours and 30 minutes

Ingredients:
1 (3 lbs) beef brisket
1 medium onion, thinly sliced
salt and pepper to taste
1 (12 fl oz.) can beer
1 (12 oz.) bottle tomato-based chili sauce
3/4 cup packed brown sugar
Directions:
Preheat the oven to 325 degrees F (165 degrees C).
Season the brisket on all sides with salt and pepper, and place in a glass baking dish.
Cover with a layer of sliced onions.
In a medium bowl, mix together the beer, chili sauce, and brown sugar.
Pour over the roast.
Cover the dish tightly with aluminum foil.
Bake for 3 hours in the preheated oven.
Remove the aluminum foil, and bake for an additional 30 minutes.
Let the brisket rest and cool slightly before slicing and returning to the dish.
Reheat in the oven with the sauce spooned over the sliced meat.
